Sweet Potato Oatmeal Breakfast Bake

 
 

Ingredients

    • 1 cup regular oats
    • 2 cups almond milk 
    • 2 small sweet potatoes steamed
    • 1 ripe large banana
    • 1 tbsp chia seeds 
    • 1-2 tsp pure vanilla extract
    • 1 tsp ground cinnamon
    • 1/8 tsp nutmeg
    • 3 tbsp honey
    • Chopped Pecans (optional)

Instructions

  1. Preheat oven to 350F. Steam Sweet Potatoes.
  2.  Add the oats, milk, and chia seeds. Whisk well and bring to a boil. Reduce heat to low-medium and cook for about 5-7 minutes, stirring frequently. With the blender mash in the cooked sweet potato and the banana into the bowle, leaving some chunks for texture. Now stir in the cinnamon, honey, nutmeg. Adjust seasonings if necessary. 
  3. Now sprinkle on the pecan topping.
  4. Bake, uncovered, for 20 minutes at 350F.
