Almond Blueberry Muffins

Ingredients:

  • 2 Cups Almond Flour
  • 2 Eggs
  • 2 Egg Whites 
  • 1/8 Pure Maple Syrup
  • 1/2 Tsp Baking Soda
  • 1 Tbsp Apple Cider Vinegar
  • 1 Tsp Vanilla Extract
  • 2 Tbsp Coconut Oil 
  • 1 small bag of frozen Blueberries (thawed and drained)

Directions:

  1. Pre-heat oven to 350 F.
  2. Place all ingredients excluding blueberries into mixer
  3. Once completely mixed fold in blueberries.
  4. Evenly scoop batter into muffin tin, I used about 1/4 cup per muffin
  5. Bake for 25 minutes. Makes 12 muffins
