Applesauce Blueberry Muffins

1 cup oats
1 cup vanilla almond milk
1 cup quinoa flour
1/4 cup brown sugar
1/4 honey
1/2 cup unsweetened applesauce
2 egg
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 tsp honey
blueberry’s
optional: chia or flax seeds, nutritional yeast.

Preheat the oven to 400 degrees. Combine all ingredients and mix until just combined. Do not over mix the batter or the muffins will be tough. Gently, fold in blueberry’s. Spoon muffin mixture into muffin pan. Bake for 20-25 minutes.
